
This webinar discusses the concept of Green Hospitality as a notion that is dynamic in the larger realm of Human Environmental Relations and Sustainability in Tourism. This discussion strives to explore the ways in which the hospitality and food industries can redefine their environmental roles by adopting circular food systems and local procurement as well as waste minimization and eco-innovation. Through the interconnection of the theoretical knowledge on ecological behavior and place attachment and empirical data in the field of sustainable gastronomy and ecotourism, this webinar will emphasize the role of individual, community, and institutional actions in the establishment of harmonious human–environment relations. The participants will be informed of current research trends, such as the digitalization of food management, low-carbon management in hospitality, and the application of ecological awareness in developing consumer behavior. Finally, this session aims at closing the gap between scholarly investigation and practical sustainability approaches in hospitality, tourism, and food production.

Prof. Dr. Sonja Veljović is an Assistant Professor at the Faculty of Hotel Management and Tourism in Vrnjačka Banja, University of Kragujevac. Her scientific work focuses on sustainable gastronomy, food innovation, and bio-waste management, with a special emphasis on developing environmentally responsible gastrotourism models and advancing circular economy practices in hospitality. She has coordinated and participated in numerous national and international research projects aimed at improving sustainability in food production, environmental protection, and the valorization of local resources. Her research includes chemical and sensory analyses of food and beverages, the optimization of food waste reduction processes, and the development of innovative green solutions for the hospitality and tourism industries. Dr. Veljović has authored a large number of scientific publications in high-impact international journals indexed in Web of Science and Scopus, contributing to interdisciplinary research that connects food science, tourism, and sustainability. She actively collaborates with research institutions and industry partners across Europe and serves as a mentor and project leader in initiatives that promote sustainable food systems and responsible tourism.

Prof. Dr. Filip Đoković is a Full Professor and Dean of the Faculty of Organizational Studies EDUKA, University Business Academy in Novi Sad, Serbia. His academic and research interests encompass tourism, hospitality management, strategic management, and sustainable development, with a particular focus on integrating theoretical frameworks and practical applications in modern business environments. He is the author and co-author of numerous scientific papers, monographs, and textbooks published in reputable international and national journals indexed in Web of Science and Scopus. Prof. Đoković has participated in several international and national research projects and maintains active collaborations with academia and the tourism industry in Southeast Europe. As a frequent participant and speaker at international and national scientific conferences, he combines academic expertise and professional experience to promote innovation, sustainability, and strategic development in tourism and hospitality.

The webinar titled Green Hospitality and Human–Environmental Relations: Toward Sustainable Food Systems and Responsible Tourism brought together experts in the fields of sustainable tourism and hospitality with the aim of exchanging contemporary knowledge and research perspectives. The event was chaired by Prof. Dr. Tamara Gajić, Geographical Institute “Jovan Cvijić” SASA, Belgrade, as well as the Faculty of Organizational Studies EDUKA Belgrade, University Business Academy in Novi Sad. The presentations were delivered by Prof. Dr. Filip Đoković from the Faculty of Organizational Studies EDUKA Belgrade, University Business Academy in Novi Sad, and Prof. Dr. Sonja Veljović from the Faculty of Hotel Management and Tourism in Vrnjačka Banja, University of Kragujevac. Their contributions addressed sustainable food systems, circular economy, and food waste management, with a particular focus on the application of these principles in the hospitality and tourism sectors.
The discussion emphasized the importance of reducing food waste, improving resource efficiency, and implementing circular business models as key components of the green transformation. Special attention was given to the integration of environmental, economic, and social dimensions into modern tourism practices, as well as to strengthening collaboration between academia and industry in order to advance sustainable development.
