Abstract: Tyrosinases, better termed polyphenoloxidases (EC 18.104.22.168; monophenol, o-diphenol: oxygen oxidoreductase), are copper-containing monooxygenases catalyzing the o-hydroxylation of monophenols to the corresponding catechols (monophenolase activity) and the oxidation of catechols to the corresponding o-quinones (diphenolase activity).
