We are glad to announce for our joint webinar organized by food MDPI for academics interested in metabolomics emerging application in food sciences and to advertise for our special issue on food metabolomics handled by Foods MDPI https://www.mdpi.com/journal/foods/special_issues/Metabolomics_Food_Gut . Metabolomics is a unique tool in modern system biology that has been recently employed for fingerprinting and/or profiling the overall chemical makeup of food products. Different analytical approaches are followed in non-targeted metabolomics to include “metabolic profiling” in which analysis of a class of metabolites versus “metabolic fingerprinting” that refers to analysis of the total set of metabolites, avoiding biases against certain classes of compounds. Both metabolic approaches are used in the search for new biomarkers of quality and authenticity, and, certainly, to contribute to biochemical knowledge of foods and understanding of the mechanisms of action in food-production processes.
