
Dear Colleagues,
It is my great pleasure to invite you to participate in the Second International Conference on Antioxidants: Bridging Mechanistic Insights, Human Health, and Industrial Applications (ICA 2027).
The conference is organized by the MDPI open access journal Antioxidants and will take place as a three-day event in Lisbon, Portugal, from 17 to 19 May 2027.
Antioxidants continue to represent one of the most dynamic and interdisciplinary areas of scientific research. Their importance spans numerous fields, including human health, nutrition, food science, biotechnology, agriculture, environmental sustainability, and advanced functional materials. As research in this field continues to expand, there remains a pressing need to deepen our understanding of the mechanisms underlying antioxidant activity and to translate scientific discoveries into practical applications.
Although remarkable progress has been made over recent years, significant challenges remain. Further research is needed to better understand the mechanisms of action of antioxidants, their bioaccessibility and bioavailability, oxidative stress and antioxidant defense systems, antioxidant-based therapeutic strategies, and the development of functional foods and biomaterials with antioxidant properties. At the same time, continued efforts are required to identify new natural sources of antioxidants, develop sustainable extraction and processing technologies, and further standardize analytical methods for evaluating antioxidant capacity.
The scientific programme will feature keynote lectures, invited presentations, contributed talks, and poster sessions covering a broad range of topics, including:
The conference will bring together internationally recognized scientists from academia and industry, providing an excellent platform for exchanging ideas, presenting the latest research findings, establishing new collaborations, and fostering interactions between early-career researchers and leading experts in the field.
Participants will also be encouraged to submit full manuscripts based on their presentations for consideration in a dedicated Special Issue of Antioxidants.

The University of Naples Federico II, Naples, Italy;Alessandra Napolitano, PhD in chemistry, full professor of Organic Chemistry at the Department of Chemical Sciences of Naples University Federico II since 2011. She is the author or co-author of about 285 publications (orcid.org/0000-0003-0507-5370, h-index: 59 may2026) in the fields of organic and bioorganic chemistry and book chapters regarding pigmentation, food chemistry and antioxidants of natural origin. Awarded with the Quilico Medal by the Italian Chemical Society, Organic Chemistry Division, and the Raper Medal by International Federation of Pigment Cell Societies Main research interests include: polyphenol antioxidants of dietary origin; human epidermal pigments melanins and related bioinspired pigments; design and preparation of functional biomaterials based on polyphenols and polyphenol containing agri-food wastes. She is the head of the research group working on polyphenol chemistry operating at the Department of Chemical Sciences of Naples Federico II University, and has many active collaborations with international scientific institutions. She is responsible of projects supported by international companies. She has been invited speaker and/or chairperson in several international meetings related to melanin pigmentation and polyphenol chemistry and applications, and has been in charge of the organization of international meetings and schools. She is presently associate editor of the open access journal Antioxidants and guest editor of special issues on several journals. She has served as secretary of the European Society for Pigment Cell Research and Member of the Council of the Federation of Pigment Cell Societies.

Unit of Nutrition and Cancer, Catalan Institute of Oncology (ICO), Bellvitge Biomedical Research Institute (IDIBELL), Barcelona, Spain ;Raul Zamora-Ros, PhD in nutritional epidemiology, is a researcher since 2016 and co-head of the Unit of Nutrition and Cancer at ICO-IDIBELL. He is the author or co-author of about 185 publications (orcid.org/ 0000-0002-6263-6804, h-index: 53 in Web of Science in July 2026) and > 10 book chapters. Awarded with the Jesus Serra (Second Edition) for young scientist specialized in the area of Nutrition, Diet and Health in 2019. He is responsible of 7 national projects and 3 international projects (2 as a WP leader), and 2 non-competitive contracts. His main line of research is focused on whether dietary factors, particularly (poly)phenols and (poly)phenol-rich foods, are causally associated with the development of chronic diseases, especially cancer. He has supervised 6 PhD and > 20 master thesis. He has been invited speaker and/or chairperson in several international meetings related to polyphenol and health and has been in charge of the organization of international meetings. He is presently associate editor of the open access journal Antioxidants, and guest editor of special issues on several journals.
