This will be the first electronic conference on Nutrients. Dr. Fernandez’ area of research is the effects of dietary strategies and drug treatment to prevent cardiovascular disease, diabetes, and metabolic syndrome. She has received funding from the USDA, industry, and pharmaceutical companies to support her work on the mechanisms through which these dietary interventions or drug therapies reduce dyslipidemias, oxidative stress, and inflammation. In her research, Dr. Fernandez has employed different dietary regimes including the Mediterranean diet, carbohydrate restricted diets, inclusion of anti-oxidants from grapes, and, more importantly, she has established the lack of association between eggs and heart disease risk factors. She has ongoing collaboration studies with Mexico to determine risk factors for heart disease in children and diabetic individuals and conducted a study in the United Arab Emirates to evaluate risk factors for metabolic syndrome in this population. Dr. Fernandez was a member of the Food and Drug Administration (FDA) Nutrition committee for four years. She is currently the Editor-in-Chief for Nutrients, a prominent journal in nutrition. She has authored 261 peer-reviewed papers, 14 book chapters, plus 242 scientific abstracts. Dr. Fernandez was the recipient of the Uconn Provost Award for Research in 2007, the Ed Marth award for mentoring in 2017, and the Career Research Award in 2020. She has been invited to present her work in the international arena including Argentina, Brazil, Canada, Colombia, Denmark, Dominican Republic, Ecuador, Egypt, Ireland, Mexico, Panama, Peru, Portugal, Saudi Arabia South Korea, Spain, and the United Arab Emirates. During her tenure at Uconn, Dr. Fernandez has graduated 36 Ph.D. students from all over the world in the area of diet and heart disease who currently hold prominent positions in academia, industry, and government agencies. In addition, she has graduated 22 M.S. students and has mentored more than 30 undergraduate students in her laboratory.

Dr. M. Dolores del Castillo is a Research Scientist with the Spanish National Research Council (CSIC). She received her Ph.D. in food science and technology at Complutense University of Madrid, Spain, in 1999. She was awarded a Marie Curie fellowship from the European Commission to complete her postdoctoral training in food and health at the University of Reading, U.K., and a Salvador Maradiaga grant for her training at Beth Israel Deaconess Medical Center/Harvard Medical School in Nutrition/Metabolism, Boston, USA. In 2004, Dr. del Castillo was appointed a Tenured Scientist at CSIC and as a Research Scientist in 2009. Since 2011, she has been the Head of Food Bioscience Laboratory at the Institute of Food Science Research (CIAL), a research institute belonging to CSIC and the Autonoma University of Madrid (UAM). She has published more than 90 peer-reviewed scientific research papers (51 in the last 10 years), 14 book chapters, and more than 20 articles in non-indexed journals, and has participated in more than 100 communications in national/international conferences, and authored 5 patents. She has been principal investigator for more than 10 research projects funded by different agencies and industry. She was a professor of the Ingredients and Functional Foods Module, Master in Food Quality and Safety of the University of the Basque Country (UPV/EHU), Spain (2007–2018) and is currently a professor of the Master of Food Safety organized by the Official College of Veterinarians of Madrid. In the last five years, she has supervised more than 15 B.S., 20 M.S., and 6 Ph.D. theses. David Nieman is a professor with the Department of Biology, College of Arts and Sciences, at Appalachian State University, and director of the Human Performance Lab at the North Carolina Research Campus (NCRC) in Kannapolis, NC, USA. Dr. Nieman is a pioneer in the research area of exercise and nutrition immunology, and his current work is centered on investigating unique nutritional products as countermeasures to exercise- and obesity-induced immune dysfunction, inflammation, illness, and oxidative stress using a multi-omics approach. Dr. Nieman has received more than USD $10.5 million in research grants and published more than 370 peer-reviewed publications in journals and books. Dr. Nieman’s Google Scholar h-index is 101, and his publications have been cited more than 39,000 times. He is the author of nine books on health, exercise science, and nutrition, including Nutritional Assessment (New York: McGraw-Hill, 2019, now in its 7th edition). Dr. Antje Hebestreit is the head of the Lifestyle-Related Disorders Unit at the Leibniz Institute for Prevention Research and Epidemiology – BIPS, Germany. After her diploma in nutritional sciences and home economics and her Ph.D. in the field of nutritional epidemiology, she worked as a postdoctoral research fellow for Harvard University and as a consultant for the UN World Food Programme. Over the years, her work has focused on studying the role of dietary intake, dietary behavior, physical activity, and sedentary behaviors in the development of non-communicable diseases, and on primary prevention strategies for child and adolescent obesity.

Stefano Guandalini is Professor Emeritus and former Chief of the Section of Pediatric Gastroenterology, Hepatology and Nutrition of the University of Chicago. He has served as President of SIGENP (Italian Society for Pediatric Gastroenterology, Hepatology and Nutrition), then of ESPGHAN (European Society for Pediatric Gastroenterology, Hepatology and Nutrition) and as founder and first President of FISPGHAN (the Federation of the International Societies for Pediatric Gastroenterology, Hepatology and Nutrition). He founded and served as first President of the NASSCD (the North American Society for the Study of Celiac Disease, now SSCD - Society for the Study of Celiac Disease) from 2011-2013. He is also the Founder (and has been Medical Director until 2018) of the University of Chicago Celiac Disease Center, one of the pre-eminent comprehensive centers for celiac disease in the country. Lara Dugas, PhD, MPH, FTOS received her doctorate in Exercise Physiology from the University of Cape Town, South Africa in 2004. In 2007 she joined Loyola University Chicago as a research associate, utilizing her training in the measurement of human metabolism, including whole body energy expenditure, diet and physical activity monitoring. In 2011, she completed her MS in Clinical Research Methods, in 2013 she obtained her MPH in Epidemiology, and in 2016 she was named a fellow of The Obesity Society. Her research is focused on obesity and health outcomes in populations of African-origin, specifically the role of intermediary metabolites, including metabolite profiles and short chain fatty acids derived from the gut microbiota. She is the principal investigator of two NIH-funded studies exploring the role of the gut microbiota in the development of obesity, sleep disorders and cardiometabolic risk in 5 African-origin populations.

The most important scientific achievements include the selection of probiotic strains, the development of probiotic formulas intended as human dietary supplements and as feed additives in animal feed. Katarzyna Śliżewska belongs to the Polish Society of Microbiologists. Previous achievements in science, Katarzyna Śliżewska covers a total of 319 items, including 78 original works published in peer-reviewed journals, 5 author's books and 20 book chapters. She is the author of 15 patents and 8 patent applications. She delivered 67 oral presentations at conferences and seminars, presented 110 posters and 16 presentations at trade shows and inventions. She is the also the supervisor of more than 80 student thesis of the International Masters on-line in Nutrition and Dietetics, Ibero-American University Foundation (FUNIBER) and co-supervisor of 5 PhD students, at the Polytechnic University of Marche. She has extensive experience in field of chemistry, in the assessment of the nutritional and phytochemical composition of different foodstuffs, and in the field of biochemistry and nutrition, in the evaluation of the role of bioactive compounds from different dietary matrices on human health (especially strawberry and honey), and in particular on the biological mechanisms related to oxidative stress and inflammation, in different in vitro and in vivo experimental models. She is the author of about 136 papers in international scientific journals (according to Web of Science database h-index 29, 5983 citations, 16 papers awarded with the "Highly Cited Papers" by Thomson Reuters/Clarivate Analytics). Elad Tako holds degrees in animal science (B.S.), endocrinology (M.S.), and physiology/nutrigenomics (Ph.D.), with previous appointments at the Hebrew University of Jerusalem, North Carolina State University, and Cornell University. As a Research Physiologist with USDA/ARS, and courtesy associate professor at Cornell University, Dr. Tako’s research focuses on various aspects of trace mineral deficiencies, emphasizing molecular, physiological, and nutritional factors and practices that influence intestinal micronutrient absorption. With over 150 peer-reviewed publications and presentations, he leads a research team focused on understanding the interactions between dietary factors, physiological and molecular biomarkers, the microbiome, and intestinal functionality. His research accomplishments include the development of the Gallus gallus intra-amniotic administration procedure, and establishing recognized approaches for using animal models within mineral bioavailability and intestinal absorption screening processes. He has also developed a zinc status physiological blood biomarker (red blood cell Linoleic Acid: Dihomo–Linolenic Acid Ratio), and molecular tissue biomarkers to assess the effect of dietary mineral deficiencies on intestinal functionality, and how micronutrients dietary deficiencies alter gut microbiota composition and function.

Dr Pietro Vajro graduated in Medicine and post-graduated in Pediatrics, and in Hepatology. At present he is Full Professor of Pediatrics at the Department of Medicine and Surgery of the University of Salerno, where he is in charge of the Residency Program in Pediatrics and is Director of the Clinical Pediatric Unit at the University Hospital. He spent two extended periods of training and research as "Assistant Etranger " at the Pediatric Hepatology Unit of Bicetre (France) directed by prof.Alagille and as “visiting Professor-Advanced NATO Fellow” at the Liver Center of the University of California - San Francisco. His main clinical and research interests are concentrated on pediatric liver diseases and on the correlation between systemic diseases, pediatric nutrition and hepatobiliary tract disorders. He published more than 200 original full papers in international peer reviewed journals and gave many invited speeches at relevant congresses/meetings. Francisco J Pérez-Cano was born and educated in Barcelona. He studied the degree of Pharmacy (1999) at the University of Barcelona (UB) where he also studied different masters in higher education. He joined in 1996 as student to the “Autoimmunity and Tolerance Research Group” in the Department of Physiology. He moved to the Center for Immunology at the University of California-Irvine in 2003-2004 to complete his training and he defended his PhD about “Mucosal Immunity Acquisition in Early Life” in 2004. After that, he was hired as associate professor (2005), Lecturer (2007) and finally as a Permanent Lecturer (2011) in the Department of Physiology of the University of Barcelona. He is currently teaching different subjects in the Degrees of Pharmacy, Food Science and Technology, Human Nutrition and in several University Masters. He performed a post-doctoral training (2009) at the University of Reading (UK) and has participated in more than 50 research projects with public funding but also in collaboration with industry. Francisco has more about 100 peer-review manuscripts, a book and several book chapters in the field. Francisco’s research interests are Immunonutrition in early life. He has focused, on the one hand in the impact of cocoa, and its components, in immunity and microbiota in health conditions but also in disease by using models of acute/chronic inflammation and allergy. On the other hand, he has studied the impact of several components present in breast milk (whey proteins, lactoferrin, CLA, oligosaccharides, probiotic bacteria, etc.) at preclinical level on the developing immune function of infants but also under viral infections. His current line of research is focused on the effect of prebiotics, probiotics, postbiotics and its combinations on the neonatal immune system. Anna Tagliabue is Full Professor of Human Nutrition at the Medical School of the University of Pavia in Italy. She is in charge of teaching course on Human Nutrition and Dietetics and directs the Degree Course of Dietetics and the Human Nutrition and Eating Disorders Research Centre of the same University. She is medical consultant for ketogenic dietary therapies at the Mondino Neurological Foundation of Pavia. The principal topics of research pursued by Prof Tagliabue in her scientific career include: ketogenic dietary therapies for drug-resistant epilepsy and GLUT1-DS; the role of gut microbiota in health and diseases; the clinical and psychological assessment and management of obesity and eating disorders and the study of energy expenditure and body composition She is the author of more than 100 publications including scientific articles and book chapters on these topics.

Laura R. McCabe is a Michigan State University Foundation Endowed Professor in the Departments of Physiology and Radiology. McCabe has over 100 publications, reviews and chapters and has been funded by a variety of federal (NIH, NSF, NASA, DOD) and foundation (American Diabetes Association, Crohn’s and Colitis) agencies. Her graduate training at U Chicago examined diabetes-induced changes in intestinal epithelial cell gene expression and function. Her post-doctoral training at U Mass Medical Center, focused on molecular mechanisms regulating osteoblast differentiation. Her current research combines her expertise by focusing on the role of gut-bone signaling in mediating (and preventing) osteoporosis associated with disease and aging. Working with probiotics, genetically modified mice and bacteria, and compounds that modify gut function, the lab is occupied with pinpointing mechanisms of intestine-bone signaling and identifying novel gut-targeted therapies to prevent osteoporosis.

Margarida Castell is full professor in the Section of Physiology, Department of Biochemistry and Physiology, Faculty of Pharmacy and Food Science, at the University of Barcelona, leading the research group of Autoimmunity and Tolerance. She is also member of the Research Institute of Nutrition and Food Safety at the University of Barcelona. Her research is centred on immunonutrition by searching the influence of nutrients on the immune system, particularly the intestinal lymphoid tissue, in rodents, since gestational life until adult life, and also in particular immune diseases, such as allergy. She is author of more than 150 peer-reviewed publications and she has been guest editor of special issues such as "Chocolate and Cocoa in Human Health", “Flavonoids, inflammation and immune system”, and "Natural Polyphenols and Health”. She has been principal investigator of numerous public research grants. She is founding member of the International Society of Chocolate and Cocoa in Medicine.

The Interactions Between the Mechanistic Target of Rapamycin (Mtor) and the Microbiome
Dr. Ghada Soliman is an Associate Professor of Nutrition and Doctoral Program Director in the Department of Environmental, Occupational, and Geospatial Health Sciences at the City University of New York (CUNY) Graduate School of Public Health and Health Policy. She received her medical degree from Cairo University. Dr. Soliman earned her PhD in Nutritional Sciences from the University of Arizona, Tucson, the USA, with a major in Nutritional Biochemistry and a minor in Immunology and Microbiology. In addition, she completed her Dietetic Internship at the University of Michigan, Ann Arbor; and earned her post-doctoral fellowships at Baylor College of Medicine, Houston, at the Children’s Nutrition Research Center, Atherosclerosis, Lipoprotein Research, and Vascular Biology as well as translational research. Dr. Soliman’s transdisciplinary research portfolio spans cardiometabolic and cancer research, chronic disease prevention, microbiome, population health, school nutrition, systems biology, and laboratory-based nutrient metabolism. Her research integrates nutrigenomics, the mechanistic Target of Rapamycin (mTOR) signaling network, integrative microbiome, metabolomics, diet, and the exposome; as well as the use of genome-wide association studies (GWAS) databases to investigate the causal role of mTOR and nutrients in diabetes and obesity, to explain health outcomes, and inform repurposing opportunities of FDA-approved mTOR inhibitors. She has a well-established track record in research and teaching and taught several courses on human nutrition across the life-course, community nutrition education, nutrient metabolism, biology, and pathogenesis of chronic and infectious diseases.

Dr. Raquel Abalo, Professor of Pharmacology at Universidad Rey Juan Carlos (URC), Head of the High Performance Research Group in Physiopathology and Pharmacology of the Digestive System (NeuGut-URJC) and Head of the Area of Pharmacology at the Dept. of Basic Health Sciences (URJC). She received her PhD in Biological Sciences at Universidad Complutense de Madrid (Spain, 2000). Immediately afterwards, she was appointed as an instructor of Pharmacology and Nutrition at URJC, where she continued her research as an Assistant Professor in 2007, as an Associate Professor in 2011, and as a Full Professor in 2017. Her field of expertise is the gastrointestinal tract where she has studied the side effects of different drugs (cannabinoids, opioids, chemotherapy). More recently, she has started to study gastrointestinal alterations in models of diabetes, irritable bowel syndrome, schizophrenia and sepsis. In all of them, she looks for new pharmacologic and nutritional/nutraceutical strategies to improve altered gastrointestinal function. She has been the principal investigator or co-investigator on more than 30 grants from different scientific funding agencies (national public funding and funding from private entities, like Fundación Mapfre) and industry (Laboratorios del Dr. Esteve, Allergan) since 2000. She has published more than 75 peer-reviewed scientific research papers, review papers and book chapters/editorials.

Raúl Beltrán Debón is a visiting professor in the Department of Biochemistry and Biotechnology at the Rovira i Virgili University since 2015. He studied Biochemistry at the same University and did his doctoral thesis at the Institut d'Investigació Sanitària Pere Virgili (IISPV) where he studied the possible modulating effects of polyphenols on inflammation and metabolism in the context of obesity and hepatic steatosis. He is member of the Molecular Bioactivity of Food Research Group (MoBioFood) since 2018. He has directed a doctoral thesis and participated in more than 80 papers published in international journals with 2031 citations that show an h-index of 26 according to the Web of Science (October 2020).

Dr. Jaime Uribarri is a practicing nephrologist and clinical investigator in NYC. He was born in Chile and received his medical degree from the University of Chile School of Medicine. He did all his postgraduate training in the United States. He has been in The Icahn School of Medicine at Mount Sinai, NYC, since 1990, where he is currently Professor of Medicine and Director of the Renal Clinic and the Home Dialysis Program at the Mount Sinai Hospital. In parallel with his clinical activities, Dr Uribarri has been very active in clinical investigation for the past 30 years. His main areas of research have been on acid-base and fluid and electrolytes disorders as well as nutrition in chronic kidney disease and diabetic patients. He has published almost 200 peer-reviewed papers and written many chapters in books. He has lectured extensively on these research topics in New York City as well as in national and international meetings. He has edited a book on dietary AGEs and co-edited a book on dietary phosphorus published by the CRC Press. He serves as an ad hoc referee for numerous nutrition, medical and other scientific journals and he is an active member of several health organizations and professional associations including: The American Society of Nephrology, The American Society of Nutrition, The International Society of Nephrology, The New York Academy of Sciences, and The Maillard Society.

Submissions should be completed online by authors by registering with www.sciforum.net and using the "New Submission" function once logged into the system.
- Scholars interested in participating in the conference can submit their abstract (about 200–300 words) online on this website until 25 September 2020.
- The Conference Committee will notify the acceptance of the abstract by 5 October 2020.
- In case of acceptance, authors will be asked to submit their manuscript along with a presentation and an optional video presentation of their paper (only PDF) until the submission deadline of 15 October 2020.
- The manuscripts and presentations will be available at https://iecn2020.sciforum.net/ for discussion and rating during the conference from 2–15 November 2020.
- The open access journal Nutrients will publish a Special Issue of the conference proceedings papers.
- All accepted extended abstracts will be published as one dedicated volume in MDPI Proceedings series journals (ISSN: 2504-3900, https://www.mdpi.com/journal/proceedings).
- After the conference, the Conference Committee will recommend manuscripts that may be included for publication in this Special Issue.

Manuscripts should be prepared in MS Word or any other word processor and should be converted to PDF format before submission. The publication format will be PDF. The manuscript should be at least three pages (including figures, tables and references). There is no page limit on the length, although authors are asked to keep their papers as concise as possible.
Authors are encouraged to prepare a presentation in PowerPoint or similar software, to be displayed online along with the manuscript. Slides, if available, will be displayed directly on the website using the proprietary slide viewer atSciforum.net. Slides can be prepared in exactly the same way as for any traditional conference where research results are presented. Slides should be converted to PDF format before submission so that our process can easily and automatically convert them for online display.
Besides their active participation within the forum, authors are also encouraged to submit video presentations. The video should be no longer than 20 minutes and be prepared in one of the following formats:

Authors that wish to present a poster only, i.e., without proceedings paper, can do so in section I. Posters of this conference. Paper Format: A4 paper format, the printing area is 17.5 × 26.2 cm. The margins should be 1.75 cm on each side of the paper (top, bottom, left, and right sides).
- Formatting/Style: Papers should be prepared following the style of Nutrients. The full titles and the cited papers must be given. Reference numbers should be placed in square brackets [ ] and placed before the punctuation; for example, [1,2], [3] or [1–3]. All the references should be listed separately as the last section at the end of the manuscript.
- Author List and Affiliation Format: Authors' full first and last names must be given. Abbreviated middle names can be added. For papers written by various contributors, a corresponding author must be designated. The PubMed/MEDLINE format is used for affiliations: complete street address information including city, zip code, state/province, country, and email address should be added. All authors who significantly contributed to the manuscript (including writing a section) should be listed on the first page of the manuscript, below the title of the article. Other parties who provided only minor contributions should be listed under Acknowledgments only. A minor contribution might be a discussion with the author, reading through the draft of the manuscript, or performing English corrections.
- Figures, Schemes, and Tables: Authors are encouraged to prepare figures and schemes in color. Full color graphics will be published free of charge. Figures and schemes must be numbered (Figure 1, Scheme I, Figure 2, Scheme II, etc.) and an explanatory title must be added. Tables should be inserted into the main text, and numbers and titles for all tables supplied. All table columns should have an explanatory heading. Please supply legends for all figures, schemes, and tables. The legends should be prepared as a separate paragraph of the main text and placed in the main text before a table, a figure, or a scheme.
