Welcome Message

In celebration of World Food Day 2024 (https://www.fao.org/world-food-day/en), MDPI is launching a special webinar to encourage researchers to unite, take action, and showcase how collective knowledge can address the pressing challenges of food security, sustainable agriculture, and resource management.

World Food Day, led by the Food and Agriculture Organization of the United Nations (FAO), aims to foster awareness about the importance of food security and the urgent need to eradicate hunger worldwide. In line with this mission, our upcoming webinar invites researchers and experts to discuss innovative solutions for achieving sustainable agriculture, improving resource management, and tackling food insecurity worldwide.

Valorisation of Food Residues for the Food Industry: Opportunities and Challenges
Bio
Prof. Dr. Giorgia Spigno holds an MSc in Food Science and Technology (1999) and a PhD in Chemical and Processing Engineering. Since 2021, she has been a Full Professor in Food Science and Technology at Università Cattolica del Sacro Cuore (Italy) where she is Coordinator of the MSc in Food Science and Technology and where she teaches different courses in Food Processing and Plants, Food Packaging and Risk mitigation in Food processing. Her main expertise is in food processing, food packaging and plant design, optimisation, and innovation. The main current research activity is on plant-based proteins, oleogels and different valorisation strategies for conversion of residual biomasses into new materials and ingredients to enter again the food chain.

Bio
Professor Ram Ramanathan has more than 32 years of academic experience, working in higher education in multiple countries (UAE, the UK, Finland, the Netherlands, Oman and India). Prior to joining the University of Sharjah, Ram worked as a Professor at the University of Essex Business School, Southend-on-Sea, UK. Ram is currently a visiting professor in Essex Business School, UK, and the University of Bedfordshire Business School, UK. He has taught basic and advanced courses on Operations Management, Production Systems Management, Supply Chain Management, Optimization Theory, Data Envelopment Analysis (DEA), Management Science, Business Statistics, Simulation, Energy and Environment, Energy and Environmental Economics, Energy and Transport Economics, and others. His research interests include operations management, supply chains, the use of Big Data, Internet of Things and Blockchain technologies for productivity improvement in enterprises and also for social causes, economic/environmental/policy analysis of issues in the energy, agriculture, transport and other infrastructure sectors. He works extensively on modelling using techniques such as optimisation, decision analysis, data envelopment analysis and the analytic hierarchy process.
