On behalf of the organizing team, I am pleased to welcome you to the upcoming Molecules webinar entitled "Recent Advances in Food Chemistry", to be held on October 24, 2025. This online event will bring together leading researchers in the field to present and discuss recent findings related to food chemistry, including topics such as food analysis, bioactive compounds, functional ingredients, and sustainable food systems. As food science continues to play a crucial role in addressing global health and environmental challenges, this webinar aims to highlight innovative research and foster scientific exchange. We are delighted to feature two distinguished speakers: Dr. José Pinela (INIAV, Polytechnic Institute of Bragança, Portugal), who is an expert in food quality, safety, and the valorization of agri-food by-products; and Dr. Ana Novo Barros (Centre for the Research and Technology of Agro-Environmental and Biological Sciences (CITAB), Institute for Innovation, Capacity Building and Sustainability of Agri-Food Production (Inov4Agro), Portugal), whose research focuses on phytochemicals and the circular use of high-value natural compounds in the agri-food sector. We look forward to your participation in what promises to be an insightful and dynamic exchange on the future of food chemistry.

Event Chairs

Bordeaux INP, INRAE, Bordeaux Sciences Agro, University of Bordeaux, France
Tristan Richard is a Full Professor at the University of Bordeaux, where he leads the MIB (Molecules of Biological Interest) group within the Enology research unit at the Institute of Vine and Wine Sciences (ISVV) in Bordeaux. He also heads the Biophysics Teaching Unit at the Faculty of Pharmacy. His research focuses on the structural and functional study of natural bioactive compounds, particularly polyphenols, using advanced analytical tools such as NMR spectroscopy and molecular modeling. He has co-authored over 180 international publications. He has led and coordinated several public–private research projects, and is deeply engaged in technology transfer and innovation. He has served in several academic leadership roles. He is currently co-director of the University’s Botanical Garden in Talence, focused on research, education, and science outreach. He serves as Editor-in-Chief of the Food Chemistry section of Molecules.

Upcycling Solanaceae Crop By-Products into Bioactive Food Ingredients
José Pinela is an Assistant Researcher at INIAV, I.P., and at CIMO/LA SusTEC–IPB, Portugal. He holds a PhD in Sustainable Chemistry (2017) and has international academic experience in Slovenia (ERASMUS) and Spain (European Doctorate). His research focuses on food quality and safety and the valorization of agri-food by-products into novel food ingredients. He is an Associate Editor of Frontiers in Nutrition, an Academic Editor of Food Science and Engineering, and a member of the editorial boards of Molecules and Exploration of Foods and Foodomics. He has edited two books and several Special Issues, and has authored 117 articles and 10 book chapters, among other publications. He is also co-inventor of one granted patent (No. 117256). He has experience in R&D projects, the supervision of students at all academic levels, teaching in higher education, and the evaluation of book and project proposals. He has participated in numerous scientific events, received academic and scientific awards, and he has organized scientific and outreach activities.

Ugly Fruit, Beautiful Ideas: How to Turn By-products into Value
Ana Novo Barros is an Associate Professor with Habilitation from the University of Trás-os-Montes and Alto Douro. She has been the Director of the Centre for the Research and Technology of Agro-Environmental and Biological Sciences (CITAB) for 5 years (May 2017-July 2022) and of the Institute for Innovation, Capacity building and Sustainability of Agri-Food production (Inov4Agro) for one year and half (January 2021-July 2022). She is responsible for the Phytochemicals Laboratory, and she is the Coordinator of the Agri-Food Quality Group. Her research targets are mainly on the identification, separation, and recovery of functional molecules from different natural products, as well as their implementation as ingredients and bioactive compounds in food, pharma and cosmetic industries, with an ultimate goal to extract high added-value molecules and re-use them in the circular economy and industrial symbiosis concepts. In the last few years, she was awarded several prizes and distinctions. She has published more than 150 scientific documents, including research articles, reviews, and editorials, within the highest impact factor journals in the Food Science and Technology field (38 h-index, SCOPUS, August 2025). She has registered 9 national and international patents. She has international collaborations and is a PI and member of several financed research projects with different typologies (in the last 5 years). She is the coordinator of the European project WASTELESS|TOPIC ID: HORIZON-CL6-2022-FARM2FORK-01-08. Her scientific work has raised interest and has led to the supervision of post-doc (3 concluded, 1 ongoing), PhD (12 concluded and 7 ongoing), master’s (50 concluded and 7 ongoing) and bachelor’s (46 concluded) students. She has been a member of organizing committees of scientific conferences, presented invited lectures at international and national conferences, and has presented >400 oral/poster communications, including papers in conference proceedings.
